    How to Cook Delicious Fluffy Pancakes From Scratch

    Whether you call them pancakes or hotcakes, delicious fluffy pancakes from scratch was probably something you enjoyed as a kid. And, you can continue to enjoy today. Fluffy pancakes are a comfort food appreciated all over the world, and they’re a breakfast staple. But you can dig into these easy homemade pancakes for breakfast, lunch, or dinner. You can include them as a side dish, or you can use them as a conduit for an endless number of proteins, fruits, or vegetables. Anything goes great on a pancake!

    When you’re making pancakes at home, you’ll more than likely be using a store-bought pancake mix. But if you truly want to go from scratch, you’ll only need four ingredients to make up the dry components of your mix: flour, baking powder, salt, and sugar. 

    For the wet components of your mix, you’ll just need butter or oil, milk or buttermilk, and eggs. If you do any home cooking, you probably have all the ingredients for pancakes in your kitchen right now.

    Fluffy Pancakes From Scratch

    Depending on their size, these measurements will yield approximately 10 to 14 pancakes. 

    Pancake Ingredients

    • 1 ¾ cups all-purpose flour
    • 2 tablespoons sugar
    • 1 teaspoon baking powder
    • ½ teaspoon baking soda
    • ½ teaspoon salt
    • 2 cups buttermilk
    • 3 tablespoons melted butter
    • 2 large eggs

    First, mix your dry ingredients. 

    Next, mix your wet ingredients.

    Then, slowly pour your wet mixture into your dry mixture, mixing it all together with a rubber spatula. Be very careful not to overwork the batter. You want to break down all of the dry clumps, but overworking the batter will eliminate the air bubbles. And you desperately need those precious air bubbles! They are the purpose of the baking powder, and they’re what make your fluffy pancakes so fluffy. 

    Grease a cast-iron skillet or electric griddle and heat it to about 375 degrees. If it’s too low, your pancakes will be tough. If the temperature is too high, the outside of your pancakes will burn by the time the center is done. 

    Scoop about ⅓ cup of batter onto your hot surface for each pancake. 

    When the entire top of the pancake is bubbling, you’ll notice that the edges are starting to turn brown. That’s how you know it’s time to flip! Learning when to flip a pancake is something that every home cook learns as they go.

    It will take the other side of your pancake slightly less time to cook than the first.

    When they’re done, just take them off the griddle or skillet, and you’re all finished! Don’t forget to turn off your griddle or stove.

    Now just add your desired toppings to your pancakes. Stack them up and serve them with butter, maple syrup, and some fresh berries on top. You can use them as a bed for some juicy fried chicken. Or, to encase a sweet fruit syrup. There are countless ways to enjoy these delicious, fluffy pancakes!

    Tips for Pancake Toppings

    If you’ve cooked bacon recently, grease your skillet or griddle with the bacon grease!

    You can also create a sweet fruit syrup by covering your favorite fruit in sugar and leaving them in the refrigerator overnight.

    A little lemon juice added to your wet ingredients and lemon zest to your dry ingredients makes for a tangy, lemony kick to set your pancakes apart from the rest.

    How to Prepare a Delicious Roasted Rack of Lamb

    If you have never tried or cooked lamb before, you are in for a treat!  A roasted rack of lamb is so delicious and is one of the most flavorful meats. Lamb is available year-round in most grocery stores. There may even be a local farmer in the area that offers fresh lamb meat for sale. However, It is best to purchase it when it is in season. Usually in the Spring. 

    There are many ways to cook a delicious roasted rack of lamb. Don’t be intimidated because roasted lamb takes a little more effort than a one-pot meal. You will do great! Here are a few ways and a recipe on how to cook a roasted rack of lamb. Your versatile under counter refrigerator drawers are the perfect place to store the lamb and fresh vegetables in your veggie box until you are ready to make your delicious meal. 

    And don’t forget about dessert!  Consider a wonderful and easy Italian dessert, such as Tiramisu, for the perfect end to a perfect meal.

    This classic version of the roasted rack of lamb is wonderful with the fresh herb of rosemary and olive oil. Fresh chopped garlic and Dijon mustard are also very popular accompaniments when it comes to a roasted rack of lamb. Herbs and breadcrumbs are great if you prefer a crusted rack of lamb.

    Classic Roasted Rack of Lamb Recipe

    • Ingredients
    • 2 pounds red potatoes, cut into 1 1/2-inch chunk
    • 2 tablespoons extra-virgin olive oil
    • 3 tablespoons Dijon or stone-ground mustard
    • 3 tablespoons chopped fresh rosemary, divided
    • 1 tablespoon chopped fresh thyme
    • 2 garlic cloves, minced
    • 1 (1 1/2- to 2-pound) rack of lamb, trimmed
    • 1 large onion, cut into thin wedges
    • 3/4 teaspoon salt
    • 1/4 teaspoon freshly ground black pepper
    • 1. Preheat oven to 425°.
    • 2. Toss potatoes with oil in a shallow roasting pan. Bake 15 minutes.
    • 3. Meanwhile, combine mustard, 1 tablespoon rosemary, thyme, and garlic; spread over the meaty side and ends of lamb rack.
    • 4. Add onion wedges, remaining 2 tablespoons rosemary, salt, and pepper to potatoes; mix well. Push mixture to edges of pan; place lamb rack, meaty side up, in the center. Bake 22 minutes or until the internal temperature of lamb reaches 140° for medium-rare. Transfer rack to a carving board; tent with foil, and let stand 5 minutes (temperature will rise to 145°).
    • 5. Transfer potato mixture to 4 warm plates. Cut lamb crosswise into 8 chops; transfer to plates and serve.

    Roasted potatoes, fresh sweet peas, Yorkshire pudding, and fresh chopped mint with a little vinegar and sugar added are the perfect sides to accompany your lamb.

    Recipes for Easy Italian Desserts You Can Make Ahead

    Easy Italian Desserts Recipes

    Tiramisu is a traditional and one of the many easy Italian desserts. And it’s one that takes a short time to make. This recipe is so easy, anyone can make it in a jiffy! The word or name “tiramisu” means to “lift me up” or “pick me up.” Coffee has that effect you know! Anyway, this easy Italian dessert was actually invented or created in the 1960s in Treviso, Italy, which is in a region of Veneto, Italy. There are a couple of chefs that take the credit for the original recipe of this fabulous and easy Italian dessert creation. 

    Here is a recipe I found that was published a few years ago online. It is an easy version for those who don’t want to spend all day in the kitchen. I hope you like it!

    Easy Italian Tiramisu Recipe


    2 packages of soft ladyfingers

    0.75 c. coffee-flavored liqueur (such as Kahlua) or coffee syrup + 3/4 cup water

    1 tub ready-to-eat cheesecake filling (Kraft Philadelphia)


    Separate and arrange 1 package of the ladyfingers on the bottom of an 8-in. square baking dish, overlapping slightly.

    Mix liqueur and water in small bowl; brush ladyfingers with half the mixture. Stir cheesecake filling in the tub until spreadable. Spoon half over ladyfingers, spreading evenly. Repeat layers.

    To add a little extra, sprinkle grated bittersweet chocolate between the ladyfinger and filling layers. Also, you can substitute hazelnut-flavored liqueur for the coffee-flavored liqueur. 

    Finally, garnish the top with sifted unsweetened cocoa powder, if desired. Cover and refrigerate for 2 hours before serving. (©Paula Hible/Woman’s Day)

    Traditional Italian Biscotti

    Another one of my favorite traditional Italian desserts is biscotti. I love to crunch on anything and why not crunch on something sweet and tasty! Great for dipping in your tea or coffee too. The sky’s the limit when it comes to adding your favorite flavor ingredients. Be creative and let’s see what you can conjure up. Here is a basic recipe that you can use to create your own. Have fun making these easy Italian desserts for your family and friends.


    3 tbsp. unsalted butter

    1 c. sugar

    2 large eggs

    1 tsp. vanilla extract

    2 c. all-purpose flour

    0.25 tsp. baking soda

    0.50 c. each shelled pistachios and chopped dried apricots

    1 grated ginger and 1 cup dried cranberries


    Heat oven to 350°F. Beat first six ingredients in a large bowl with mixer on medium speed until combined. Add your choice of flavors to this easy Italian desserts and mix together. Divide dough in two; roll each half into a 12-in.-long log. Place on an ungreased baking sheet, 3 in. apart. Bake 25 minutes.

    Remove from oven; cool 10 minutes (cool orange-chocolate completely). Cut logs into 1⁄2-in.-thick diagonal slices, place slices upright on a baking sheet and return to oven. 10 to 12 minutes until pale golden. Cool completely. (©Mary Ellen Bartley)

    Light Italian Desserts

    For those of you that prefer easy Italian desserts that are a little softer than biscotti, how about a wonderful Strawberry Panna Cotta. It’s a lite and elegant Italian dessert that is not so filling, especially after a heavy meal of Roasted Rack of Lamb, or BBQ Ribs on the grill.

    Strawberry Panna Cotta Recipe


    1 lb. strawberries

    1⁄2 c. sugar

    1 tbsp. sugar

    0.50 tsp. vanilla extract

    1 packet unflavored gelatin

    0.25 c. water

    1.50 c. whole milk

    1 c. heavy whipping cream

    Garnish: sliced strawberries (optional)


    Lightly grease eight 4-oz ramekins or cups with nonstick cooking spray.

    Purée strawberries and sugar in a blender until very smooth. Press through a sieve into a bowl; discard seeds. Stir in vanilla. Remove 1 cup for the panna cotta; reserve remaining purée.

    Sprinkle gelatin over 1⁄4 cup water in a small custard cup; let stand 5 minutes to soften. Place cup in a small skillet of simmering water; stir until gelatin is dissolved. Simmer milk in a saucepan. Remove from heat; stir in dissolved gelatin. Transfer to a 1-qt glass measure; stir in reserved 1 cup strawberry purée and the cream until well blended. Pour into ramekins. Chill, covered, until firm, about 4 hours or up to 2 days. To unmold, run a small knife around each; invert onto plates, gently shaking to remove. Spoon some of the reserved strawberry sauce onto panna cotta. (©Rita Maas)
